  • 4 ounces cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups chopped fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic (minced)
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle the chicken breasts with olive oil and season with paprika, garlic powder, onion powder, and salt.
  3. Cut pockets into each chicken breast without slicing all the way through.
  4. In a mixing bowl, combine softened cream cheese, Parmesan, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and remaining salt.
  5. Stuff the mixture into each chicken pocket.
  6. Place the chicken in a greased baking dish and bake for 25-30 minutes until fully cooked (internal temperature of 165°F).
