Instructions

  2. Whisk together dry ingredients: flour, pudding mix, baking powder, baking soda, salt.

  4. Gradually mix dry ingredients into wet until just combined; fold in lemon zest.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5-10 minutes before transferring to a wire rack.
