  • 2 packages cream cheese
  • 2 large eggs
  • ⅓ cup granulated sugar
  • 2 cups diced strawberries
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press into the bottom of the baking dish.
  3. In a large bowl, beat cream cheese until smooth. Add eggs one at a time, then mix in sugar, vanilla extract, and salt. Spread over the crust.
  4. Top with diced strawberries evenly spread across the cheesecake layer.
  5. Prepare crumble topping by mixing flour, brown sugar, and salt in another bowl; stir in melted butter until crumbly. Sprinkle over the strawberries.
  6. Bake for 35-40 minutes or until set in the center. Allow to cool completely on a wire rack before refrigerating for at least one hour.
