Ingredients
- 1/4 cup coconut flour
- 1 cup cocoa powder
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups mashed sweet potato (3–4 large sweet potatoes)
- 2 large eggs
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1 teaspoon vanilla extract
- 1 cup chocolate frosting
Instructions
- Preheat your oven to 350F (180C) and grease a 9 or 10-inch cake pan.
- In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, salt, mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract. Pulse until smooth.
- Pour the batter into the greased cake pan and bake for 45-50 minutes or until a skewer comes out clean.
