  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 8 ounces tomato sauce
  • 2 cups water (for rice)
  • 1 cup long-grain rice
  • 1 teaspoon salt (for rice)
  • 1 tablespoon vegan butter
  • 1/4 cup cilantro (for cilantro lime rice)
  • 2 tablespoons lime juice (for cilantro lime rice)
  • Romaine lettuce (chopped and rinsed)
  • 1 can whole corn
  • 1 can black beans
  • Green onion (for garnish)
  • Avocado (for garnish)
  • Cilantro (for garnish)
  • Red onion (for garnish)
  • Pico de gallo (optional)
  • Guacamole (optional)

Instructions

  1. Rinse the rice under cold water. In a pot, combine 2 cups of water with 1 cup of rice and 1 teaspoon of salt. Bring to a boil and then simmer covered for 15-20 minutes until tender. Stir in vegan butter, cilantro, and lime juice.
  2. In a large skillet over medium heat, sauté diced onion and garlic until softened. Add ground turkey and cook until browned. Mix in spices, tomato sauce, and water; simmer for about 10 minutes.
  3. Assemble the bowls by layering cilantro lime rice at the bottom followed by turkey filling, black beans, corn, and your choice of toppings.
