  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles
  • 1 1/2 cups beef broth
  • 3 tbsp tomato paste
  • 3 oz cream cheese (softened)
  • 12 oz spaghetti (cooked al dente)
  • 1 1/2 cups shredded cheese (cheddar, Mexican blend)

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Sauté onion for 3–4 minutes until soft; add garlic and cook for an additional minute.
  3. Add ground beef to the skillet; cook until browned (5–7 minutes). Drain excess fat.
  4. Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and softened cream cheese; cook for 2–3 minutes until blended well.
  5. Remove from heat; toss in cooked spaghetti and shredded cheese until coated.
  6. Serve immediately garnished with fresh cilantro if desired.
