  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk (or regular milk)
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped fresh cilantro
  • Steamed rice or noodles for serving

Instructions

  1. In a non-stick skillet, heat vegetable oil over medium heat. Season chicken with salt and pepper, then cook for 5-7 minutes on each side until golden brown and cooked through.
  2. In a bowl, mix together peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil until smooth.
  3. Pour the peanut sauce over the cooked chicken in the skillet. Stir gently to coat evenly and simmer for an additional 2-3 minutes.
  4. Serve hot over steamed rice or noodles and garnish with chopped peanuts and cilantro.
