  • ½ teaspoon paprika
  • Juice of ½ small lime
  • Salt and freshly ground black pepper, to taste
  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded (rotisserie or leftover)
  • 1 cup sour cream or plain Greek yogurt

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion for 3–5 minutes until softened, then add minced garlic and cook for an additional 30 seconds.
  2. Stir in chicken broth, green chilies, and spices (cumin, cayenne pepper, oregano). Season with salt and pepper.
  3. Drain and rinse the great northern beans; add them to the pot. For a creamier texture, blend a portion of the beans with some broth.
  4. Add whole beans, corn, and mix well. Bring to a simmer and cook uncovered for 15–30 minutes.
  5. Remove from heat and stir in sour cream (or Greek yogurt) along with shredded chicken before serving hot.
