Ingredients
- 180g (¾ cup) warm water
- 7g (2 ¼ tsp) active dry yeast
- 60g (¼ cup) honey
- 120g (1 cup) whole wheat flour
- 343g (2 ½ cups) bread flour
- 180g (¾ cup) sourdough discard
- 10g (1 ½ tsp) salt
- 60g (¼ cup) olive oil
Instructions
- Combine warm water, honey, and yeast in a bowl; let sit for 5 minutes until bubbly.
- Add whole wheat flour, bread flour, sourdough discard, salt, and olive oil. Knead until soft and pliable (about 15 minutes).
- Perform the windowpane test: stretch a small piece of dough; if it tears easily, continue kneading.
- Shape into a ball and let rise in a covered bowl until doubled in size (40 minutes to 1 hour).
- Punch down and shape into two loaves; place in greased pans for a second rise (30 minutes to 1 hour).
- Preheat oven to 350°F and bake for about 35-40 minutes until internal temperature reaches around 190°F.
- Cool on wire racks before slicing.
