  • 2 x 5oz cans tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil, divided
  • 1/3 cup shredded mozzarella
  • Sliced bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it in the skillet.
  4. Spoon about two tablespoons of the tuna mixture onto the bread while it browns.
  5. Butter another slice of bread and place it on top of the tuna mix (buttered side up).
  6. Grill until both sides are golden brown and crispy.
