  • 3 sticks unsalted butter (339g), softened
  • 3 cups sugar (600g)
  • 5 large eggs
  • 3 cups all-purpose flour (375g)
  • 1/2 teaspoon baking powder
  • 1 cup whole milk (235g)
  • 2 teaspoons vanilla extract
  • 5 tablespoons unsweetened cocoa powder (25g)
  • 5 tablespoons hot water
  • 4 oz semi-sweet or dark chocolate
  • 3 oz heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a tube pan.
  2. In a small bowl, mix cocoa powder with hot water until smooth.
  3. In another bowl, whisk together flour and baking powder; set aside.
  4. In a stand mixer, beat softened butter until creamy. Gradually add sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Alternate adding the flour mixture and milk to the batter, starting and ending with flour.
  7. Divide the batter into three parts—mix one part with the cocoa mixture.
  8. Layer batters in the prepared pan: vanilla layer first, followed by chocolate, then vanilla again.
  9. Bake for about 60–70 minutes or until a toothpick comes out clean.
