  • 1 English cucumber
  • 1 to 2 Anaheim chilis
  • 2 green onions
  • 1 1/2 tablespoons rice vinegar
  • 1 1/2 teaspoons sesame oil

  • 2 teaspoons sugar
  • 1/2 teaspoon salt

Instructions

  1. Wash and prepare all vegetables: chop cilantro, slice cucumber into thin strips, thinly slice chilis and green onions.
  2. In a large mixing bowl, combine the prepared vegetables.
  3. In a separate bowl, whisk together rice vinegar, sesame oil, soy sauce, sugar, and salt for the dressing.
