Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente; drain.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add shrimp and cook until pink (about 3–4 minutes).
  4. Stir in halved cherry tomatoes; cook until softened. Add spinach until wilted.
  5. Pour in chicken broth; season with salt, pepper, and red pepper flakes if desired.
  6. Toss cooked pasta gently with the shrimp mixture. Serve with Parmesan cheese and fresh basil if desired.
