  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken (cut into bite-size pieces)
  • 4 cloves garlic (minced)
  • 2 tablespoons sun-dried tomatoes (drained, julienne cut)
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Fresh baby spinach
  • Italian seasoning

Instructions

  1. Cook the spaghetti squash in the microwave for 8-12 minutes until tender.
  2. In a large skillet, melt butter and cook seasoned chicken until no longer pink, about 7 minutes.
  3. Remove chicken; sauté garlic and shallots in the same skillet.
  4. Stir in sun-dried tomatoes, then add heavy cream until bubbly.
  5. Mix in Parmesan cheese and spinach; return chicken to the skillet.
  6. Scrape out spaghetti squash strands and mix with the sauce until well coated.
