  • 3/4 cup all-purpose flour (or gluten-free flour)
  • 1 cup Thai sweet chili sauce
  • 1 cup vegan mayo
  • 12 teaspoons sriracha (optional)
  • 12 cups Panko bread crumbs (gluten-free if needed)
  • 1 teaspoon granulated onion
  • 1 teaspoon granulated garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 11 1/2 cups unsweetened non-dairy milk
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat oven to 425°F (218°C) or air fryer to 400°F (205°C). Line a baking tray with parchment paper.
  2. In a bowl, mix flour, granulated onion, garlic, ginger, salt, and pepper. Create a well and add non-dairy milk; whisk until smooth.
  3. Dip each cauliflower floret into the batter, allowing excess to drip off before rolling in Panko breadcrumbs.
  4. Place on the baking tray with space between florets. Bake for 30 minutes total (flipping halfway) or air fry for 15–25 minutes until crispy.
  5. While cooking, combine Thai sweet chili sauce, vegan mayo, sriracha (if using), nutritional yeast (optional), and sea salt in a bowl.
  6. Toss cooked cauliflower in the bang bang sauce before garnishing with green onions and sesame seeds.
