  • 1 cup aquafaba (chickpea water from 1 14 oz can of chickpeas)
  • 7 oz dark chocolate chips (54%)
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup

Instructions

  1. Drain the chickpea water from the can and reserve the chickpeas for another use.
  2. In a bowl, combine aquafaba, lemon juice, and maple syrup. Stir well.
  3. Use a stand mixer to whip the mixture until stiff peaks form (about 10 minutes).
  4. Melt the dark chocolate using a double boiler or microwave until smooth.
  5. Gently fold the melted chocolate into the whipped aquafaba.
  6. Spoon the mousse into serving bowls and chill in the fridge for at least 3 hours or overnight before serving.
