  • 10 sun-dried tomatoes
  • 4 garlic cloves
  • 7 oz full-fat canned coconut milk
  • 2 cups cherry tomatoes
  • 3 tbsp nutritional yeast
  • 1 tbsp Italian seasoning
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 2 cups baby arugula
  • ½ cup flat leaf parsley chopped
  • vegan parmesan optional

Instructions

  1. Cook gluten-free fettuccine according to package instructions until al dente; drain.
  2. In a heated skillet, sauté minced garlic and chopped sun-dried tomatoes for about 2 minutes.
  3. Stir in Italian seasoning and balsamic vinegar; cook for another 2–3 minutes.
  4. Add cherry tomatoes and water or broth; cover and simmer for 3–4 minutes until soft.
  5. Mix in coconut milk and nutritional yeast; season with salt and pepper. Simmer for another 5–10 minutes.
  6. Combine cooked pasta with the sauce; toss with baby arugula.
  7. Serve hot, garnished with parsley and optional vegan parmesan.
