- Melt the dairy-free butter in a mixing bowl and let it cool slightly. Add dairy-free milk, caster sugar, and sprinkle in active dry yeast; let sit until bubbly.
- Stir in plain flour, lemon zest, and salt until a dough forms. Knead on a floured surface for about 10 minutes until smooth.
- Allow the dough to rise in an oiled bowl covered with a cloth for about an hour.
- Prepare the lemon curd filling by combining coconut milk, sugar, cornstarch, and optional turmeric over medium heat until thickened; stir in lemon juice and cool.
- Roll out the risen dough into a rectangle, spread lemon curd evenly, roll into a log, cut into pieces, and place on a lined baking tray.
- Preheat the oven to 350°F (175°C) and let rolls rise again for 30 minutes before baking for 20–25 minutes until golden brown.
