  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat your oven to 400°F and grease a baking sheet with nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix melted butter and granulated sugar until combined. Add egg, vanilla extract, and applesauce; whisk until smooth.
  4. Gradually add dry ingredients to wet mixture, stirring gently until just combined. Fold in diced apples.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each.
  6. Bake for about 10 minutes; then broil for 2–4 minutes until the glaze caramelizes slightly.
  7. Glaze while warm and let cool for 15 minutes before serving.
