  • 1 red onion, chopped
  • 1 red bell pepper, chopped

  • 1 can kidney beans (15 oz), drained
  • 1 can pinto beans (15 oz), drained
  • 1 can black beans (15 oz), drained
  • 1 can fire-roasted tomatoes (15 oz)
  • 2 cups beef stock
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, minced

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crisp. Remove and drain on paper towels.
  2. Using the same pot, sauté the onion and bell pepper until tender.
  3. Add ground beef and cook until browned; drain excess grease.
  4. Combine all remaining ingredients and stir well.
  5. Simmer over medium-low heat for at least 45 minutes, stirring occasionally.
