Ingredients
- 2.5–3 lbs Yukon gold potatoes
- 1/4 cup butter
- 1 medium onion
- 8–10 cloves garlic
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1 cup cheddar cheese
- 1 cup mozzarella cheese
- 3/4 cup Parmesan cheese
- 2 tablespoons fresh parsley
Instructions
- Preheat your oven to 350°F (175°C).
- Thoroughly wash and slice the potatoes into 1/8-inch rounds.
- In a medium saucepan, melt butter over medium heat. Sauté diced onion and minced garlic for 1–2 minutes.
- Stir in flour to form a roux, then gradually add milk, chicken broth, thyme, and salt until slightly thickened.
- Mix in cheddar, mozzarella, and Parmesan cheeses until combined.
- In a greased casserole dish, layer potatoes and cheese sauce evenly three times, ending with sauce on top.
- Cover with foil and bake for 30 minutes; remove foil and continue baking for another 35–45 minutes until golden brown.
- Allow to cool for about 10 minutes before serving.
