Ingredients

  • 2 ½ pounds russet or Yukon gold potatoes
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme
  • 3 cups cheddar cheese, grated

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Thinly slice potatoes (about ⅛ to ¼ inch thick) and set aside.
  3. In a saucepan over medium heat, melt butter; add onions and sauté until softened (about 3 minutes). Stir in garlic and thyme.
  4. Sprinkle in flour and gradually whisk in heavy cream until smooth. Season with salt, pepper, and cayenne if desired. Stir in cheese until melted.
  5. Layer half of the potatoes in the baking dish, followed by half the sauce and half the cheese. Repeat layers.
  6. Cover with foil and bake for 40 minutes; remove foil and bake for an additional 20 minutes until golden brown.
