  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 5 cups beef broth
  • 15 ounces diced tomatoes with juice
  • 8 ounces tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3 cups frozen mixed vegetables (corn, green beans, and carrots mix)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef, onion, celery, and garlic; cook until browned.
  2. Drain excess fat. Stir in potatoes and beef broth along with diced tomatoes, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a simmer for about 10 minutes.
  3. Add frozen mixed vegetables and continue simmering for an additional 15-20 minutes until potatoes are tender.
  4. Taste and adjust seasonings as needed before serving warm.
