  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice 1 lime (plus extra for serving)
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 8 small corn or flour tortillas

Instructions

  1. Preheat oven to 200 degrees Celsius.
  2. In a medium bowl, whisk together chipotle paste, honey, lime juice, salt, and crushed garlic.
  3. Cut the chicken into bite-sized pieces and toss in the marinade; let sit while the oven preheats.
